Pesto is not just for pasta anymore. The delicate, flavorful lettuces and greens accompanied by this deliciously bold dressing offers a unique alternative for pesto lovers.

Ingredients

1-6 oz. package Topless Salad Quickies™ Spring Mix

Dressing (Yields ½ cup)
3 T Balsamic vinegar
2 T pesto
2 T olive oil
1 ½ tsp. sugar
Pinch of salt

Freshly grated Parmesan cheese for garnish
Toasted pinenuts for garnish

Directions

Place Spring Mix in a salad bowl. In a small mixing bowl, using a wire whisk, blend dressing ingredients until smooth and well blended. Drizzle over Spring Mix and place on individual salad plates. Top with Parmesan cheese and toasted pinenuts. Serve with seasoned focaccia. Yields 4 servings.

To Toast Pinenuts: Place desired amount of nuts onto an ungreased baking sheet. Place under a heated broiler until toasted. Watch carefully, as nuts can burn very quickly.
