Crispy Romaine Hearts with Creamy Dijon Mustard Vinaigrette

Not only is this tangy-sweet vinaigrette great for salads, but used as an alternative to ranch dressing on your next crudités platter, you’re sure to receive rave reviews.

 

 

Ingredients

1-12 oz. package Topless Salad Quickies™ Romaine Hearts
½ red onion, thinly sliced
Salt
2 avocados, sliced or cut into chunks

 

Dressing

¾ cup olive oil
¼ cup red wine vinegar
2 T Dijon mustard
2 shallots, quartered
1 T chopped garlic
1 T sugar
Salt and pepper to taste

 

 

 

Directions

Remove core at the end of each Romaine Heart.  Lightly rinse each leaf, pat or spin-dry and chop into bite-size pieces; place into a large salad bowl.  Spread onion slices onto a paper towel, and sprinkle lightly with salt.  Let sit while preparing dressing.

Blend all dressing ingredients in a blender or food processor until smooth and creamy.  Season to taste with salt and pepper.  (If not using dressing immediately, cover and refrigerate until use).  Add onion slices and avocado to Romaine.  Drizzle with dressing and toss to coat all ingredients evenly.  Yields 8 servings.
