Roasted Teriyaki Salmon on Bed of Green Onions

Fresh green onions serve as a tasty grilling bed for the salmon.  The sweet-savory marinade caramelizes the salmon and onions to
 perfection, offering up a flavor combination that makes this unique
and easy to prepare dish a winner for adults and kids!

 

Ingredients:

2 salmon fillets, about ½ lb. each
2 bunches green onions, washed and trimmed at both ends

Marinade:

1/2 cup teriyaki sauce
2 T soy sauce
1 T and 1 tsp sesame oil
2 T chipped garlic
2 T minced ginger

Directions:

Combine the marinade ingredients.  Place green onions and salmon fillets in two separate dishes.  Pour ½ the marinade over green onions and ½ over the salmon.  Cover with plastic wrap and refrigerate for at least 1 ½ to 2 hours for flavors to absorb nicely.

Preheat oven to 400F.  Line a 9 x 13 baking dish with foil.  Place onions lengthwise on top of the foil.  Place salmon, skin-side down, horizontally on top of the onions.  Pour remainder of marinade from both dishes on top of the salmon.  Bake for 25 minutes, or until salmon is bake through and no longer translucent).  Turn oven to broil; broil salmon and onions until a nice caramel color appears over the top of the salmon.

Enjoy with steamed white rice.
