Warm Brussels Sprouts in Creamy Walnut Dill Sauce

This delicate, savory cream sauce is a great accompaniment to warm tender Brussels Sprouts.  The rich walnut flavor blended with a hint of lemon imparts a unique taste that will surprise your palate.

 

Ingredients

1-12 oz. package, 1-1 lb. clamshell or 1- 1lb. Vexar bag Topless VEG Quickies™ Brussels Sprouts
1 bunch green onions, chopped, ends trimmed and discarded
3 T fresh parsley
2 T fresh dill (dried dill may be substituted if necessary)
3 T lemon juice
4 T butter, melted
½ cup vitamin D milk, or cream
¾ cup coarsely chopped walnuts
Salt and pepper to taste

Walnut halves for garnish
Lemon wedges for garnish

 

 

Directions

Bring to a boil enough water to cover sprouts.  Wash and trim sprouts.  Cut in half lengthwise and add to boiling water;  parboil for approximately 5 minutes, or until sprouts are just tender.  Remove from heat, drain and transfer to a large bowl.  In a food processor or blender, combine green onions, parsley, dill, lemon juice, melted butter, milk and walnuts.  Blend until smooth.  Add salt and pepper to taste.  Pour dressing over hot sprouts.  Toss to coat well.  Garnish with walnut halves and lemon wedges.  Yields approximately 6 servings.
