Iceberg is not only low in calories, but also hardy enough to use as a substitute for buns and bread on burgers and sandwiches for those on a low carb or gluten-free diet. More accurately called “crisp head,” this familiar pale green lettuce forms a tight, cabbage-like head and features a crisp texture and mild flavor. Although it’s not the nutritional powerhouse that other darker-green lettuces boast, it’s actually not as devoid of nutrients as most people think.
