Cauliflower

Cauliflower is the perfect example of “nutritional density”—a term used to describe foods that provide substantial amounts of vitamins and minerals, with relatively few calories. What this term doesn’t adequately describe, however, is the infinite uses of this versatile vegetable. Cauliflower, which belongs to the same family as cabbage, is an excellent source of Vitamin C, B-complex and minerals including iron and calcium.
